I'd like to see either smallpox (which would just be a variation of form from the chickenpox they already have), or my personal favorite:
Lactobacillus acidophilus: one of the major cultures for yoghurt, smetana, creme fraiche et al, as well as the original starter for pickling (a la lactofermentation) which is a hobby of mine.
